Creamy pea soup, as smooth as crushed velvet.

This was a PITA, and I dirtied about every dish and appliance in the house, but it was worth it.

My husband was the same when we got together. All he ate was meat, and the only veggies he ate were carrot and broccoli, but they had to be super small and even then he ate veggoes once a week. The only meat he used to like was beef mince and chicken breast but now he'll eat anything. I went vegan and he eats the majority of the food that I cook. For dinner, I steamed some pumpkin and sweet potato, pureed that with some soy milk, fake cream cheese and nutritional yeast and had it with macaroni pasta. It looks like mac and cheese but really orange. Trump pasta.

Last night I tried making meat sauce, but served it over spaghetti squash instead of pasta. I'm trying to lose some weight, and according to my trainer, I won't if I continue to eat healthy during the week, and binge like a maniac every weekend (in my defense, literally half the people I know are born in March so I have a LOT of birthdays to attend this month).

The recipe called for basically making a sauce in the multi-cooker (using the sauté setting), and the tossing in the whole spaghetti squash, and pressure cooking the whole shebang before hauling the squash out, scooping out the flesh, and serving the sauce overtop.

It turned out really nice! In no way did it fool me into thinking I was eating pasta, but it was pretty tasty, and much lower in calories than pasta. I was pleasantly surprised, and it only uses one pot. Win!

Husband's working late, so I nuked a sweet potato, cut it in half, and topped it with diced red pepper, black olives, cheddar cheese, a few jalapeño rings, salsa and sour cream. Yummy and filling!
