Gnocchi is a pesto cream sauce with steamed broccoli on the side.

This was one of the absolute quickest meals I've ever done. I put water on the boil, then poured some cream in a skillet and brought that to a light simmer.

I used jarred pesto since my basil isn't ready yet, and poured the oil off that for the broccoli.

Into the water with frozen gnocchi, into the cream with the pesto, steamed the broccoli in a steamer bag, and as soon as the gnocchi started to float, into the sauce.

The whole thing took 15 minutes, and 10 of it was boiling water.

I made a childhood favourite of mine: creamed tuna on toast. I think my paternal grandmother may have been the one who invented it. She had 5 kids, and this is cheap, easy, and can be stretched to feed quite a few people.

Chop up some vegetables to sauté. I usually put in onions, bell pepper, and celery, but whatever you've got in the fridge will work. Sauté until tender-crisp, and then add a can of condensed cream soup (whatever type you like - cream of broccoli, mushroom, hell, even cream of chicken will work), a can a tuna (or salmon), and a bit of water to make the consistency you like. You don't want it really soupy, but you need a bit of liquid. Cook for a couple minutes, then add some more vegetables if you feel like - frozen peas, frozen/canned corn, hard-boiled egg, asparagus, again, whatever you happen to have in the fridge. Cook until everything is heated through, and serve over toast.

Serves anywhere from 2 to 6 people, depending on how hungry everyone is and how much stuff you added. My father always insisted this is a lunch dish, but I make it quite often for dinner.

I made pizza tonight. The crust turned out perfect. It had a nice crunch to it.

Leftover Shepherds Pie from last night. A little too juicy, but very tasty. Boyfriend loves pearl onions, so I put those in instead of the vidalias I usually use.
