Thanks! While we were eating, my wife kept saying, "Oh my god...<chew>...oh my god...<chew>...oh my god..."

For the record: chuck roast, carrot, potato, and onion. Pillsbury crust because it's quick and easy and does a-ok. I hate rolling out pie crust.

Breakfast today was eggs scrambled with tomatoes, onion, jalapeño, and cilantro, topped with a little salsa, and fried potatoes with salt, pepper, paprika, chili powder, and garlic powder. Cheese in/on both.

Wife was not impressed. :(

Made a nice, fast supper last night:

Popped some chopped walnuts in the oven to toast.

Boiled water for frozen spinach-and-cheese ravioli.

Make a quick sauce of butter, balsamic vinegar, and s&up.

Tossed the ravioli in the sauce, topped with fresh Parmesan and the walnuts.

The recipe came from Giada De Laurnetis, who is known in our house as Miss TNT (Tits And Teeth).

We just got back from vacation yesterday and I was really craving some comfort food, so I made spaghetti and meatballs.

Vacation was awesome, but now it's back to eating healthy and exercising.

I made chicken breasts in a skillet with lemon, white wine, and olives. For a side dish I made a caprese salad (tomatoes, mozzarella, and basil) that also included white beans to make it a bit more substantial without adding a lot of calories. Finished the salad with a drizzle of balsamic glaze.
